Case Study: Coventry University College

Coventry University College (CUC) is an innovative concept in higher education, designed to better integrate study with commitments outside of education. They offer a range of qualifications from HNCs through to degree level courses.

As part of their degree course in Strategic Tourism and Hospitality Management, CUC required development of their new module in Hospitality Operations. The aim of the module was to explore the operational management considerations as they relate to the hospitality industry, focusing on the day-to-day business planning, operations and management considerations involved in running a hospitality business. The module focuses on developing skills and knowledge for the successful management of hotels, resorts, restaurants and catering operations.

cena was brought in as a consultancy to develop the content for this module. A sound understanding of the desired learning outcomes and student profile was gained through preliminary discussions with the client. A focus was given on creating practical, interactive and engaging learning materials, to best meet the needs of the specific students. The content focused on developing skills and knowledge in the following areas:

  • Understand the operational aspects required of accommodation services to meet customer requirements
  • Examine the operational aspects of front office services to provide high standards of customer service
  • Consider the operational aspects of food and beverage service to meet customer and regulatory requirements
  • Explain the operational aspects required of food preparation and cooking to meet customer and regulatory requirements
  • Analyse the effectiveness of operations management practices in a wide range of organisational situations within the hospitality industry
  • Discuss approaches to achieve and monitor operational effectiveness.

A blended approach to the learning materials was delivered, utilising digital media, interactive discussion and role play, case studies, tutorials and student led presentations. A full set of tutor guidance notes was provided alongside the training materials.
